Some sauces march in with smoke and menace. Others arrive dressed for sunshine and mischief. This tropical number falls firmly into the latter category. Pineapple and mango bring a bright, juicy sweetness before roasted habanero peppers step in with a warm, cheeky kick. It is not savage heat, more the sort that keeps your taste buds alert while the fruit does its charming work. I rather enjoy it on grilled chicken, prawns, and anything vaguely taco-shaped. It also behaves surprisingly well drizzled over rice bowls or sticky wings when you fancy a little island attitude at the dinner table. Sweet, lively, and dangerously easy to keep pouring.
