Hott Mango, Chipotle and Lime Sauce

Some smoky sauces batter you over the head with charcoal and misery. This one actually remembers flavour is supposed to be enjoyable. Sweet mango rolls in first, rich and tropical, before the chipotle adds layers of soft smoke and gentle warmth. Then the lime cuts through everything beautifully, so the sauce never becomes heavy or cloying. I have been using this on chicken wraps, pulled pork, roasted vegetables and disgracefully large quantities of tacos. It also makes an outrageously good dipping sauce when mixed into mayonnaise. Bright, smoky and absurdly moreish.
