Founded in 2006, the brand takes its name from the classic Aviation cocktail, a recipe that originated in the early 1900s. This gin is built on a Dutch-style rye spirit base, infused with an elegant blend of botanicals including juniper, lavender, anise, sarsaparilla, orange peel, and cardamom. The botanicals are steeped in grain spirit for 48 hours before being redistilled, ensuring a smooth, balanced, and distinctive flavour profile.
