This 12 year old single cask release from Stillwater Whisky Co. masterfully intertwines classic Speyside sherry led flavours with the tang of peat smoke from the Hebridean Islands, creating a whisky of remarkable flavour and complexity. Matured in a re-fill Amontillado hogshead, this cask previously held peated whisky from a distillery located on the Isle of Mull, adding a unique dimension to the final whisky. Amontillado sherry is a semi-oxidatively aged style, beginning its life under the ‘flor’ yeast like Fino before developing the richness and depth of an Oloroso. This results in a sherry that is both dry and nutty, with notes of toasted almonds, hazelnuts, and delicate oak spice. As a re-fill cask, the influence of the sherry is more subtle, allowing the Linkwood spirit to shine through, while still benefiting from gentle smokiness to development. Bottled at 51.5% ABV, with only 276 bottles available, this unusual release from Stillwater Whisky Co. is proudly presented at natural colour and unchillfiltered, ensuring this unique whisky remains as pure and unaltered as possible.
